we are back

it was a glorious two weeks away for a slew of obvious reasons: sun, lake, ice cream, carnival rides, delicious meals, sleeping in, celebrations, friends and family.  stay tuned for photos in the next few days.

we are now re-assimilating and back to real-life responsibilities (laundry, sick cat, work, back to school prep).  but first we get to eat welcome home lemon blueberry muffins... thanks to my hubby!



lemon blueberry muffins:

you will need:
1 2/3 cup flour
¾ tsp. baking soda
¾ tsp. baking powder
pinch salt
½ cup cornmeal
2 tbs. lemon juice
¼ cup peach nectar
2 eggs
¼ cup vegetable oil
¼ cup honey
½ cup buttermilk
zest of 1 lemon
1 cup blueberries

what to do:
sift flour, baking soda, salt together in a bowl. add the cornmeal. combine the wet ingredients, add the lemon rind and the dry ingredients. fold in the blueberries. bake at 350ºF for 15 minutes.  enjoy!
