but there was more... falafel with beets, swedish pancake with berries, soba noodles in a flavourful broth, and a tempeh burger to name a few of the tastes we shared. sharing allowed us to taste as much as possible, we thought that was a smart idea :)
we chatted with nick weston who chases, collects and prepares food in the wild. today he roasted deer and potatoes over an open fire. another fire pit would soon see two boar be cooked overnight in the ground. the guys at agrikultur were roasting veggies over an open fire and making tacos. the sami, from lapland, were there showcasing traditional cooking too. stefan had their coffee with dried reindeer (he preferred the former more than the latter).
you'd think we were done after all this food but we were not. we booked a lunch too, long tables in the middle of the island. niklas ekstedt, the swedish chef who organized foodstock, is all about cooking with charcoal and smoke and he teamed up with tomas parry, a british chef, to put together a gorgeous lunch... crab salad; grilled leeks with cabbage, hay butter and cheese; hay roasted duck with beetroots and potatoes; and my favourite, the smoky and creamy cod roe perfection. and, i loved the decor details which made the lunch all that more special.
swedish artisans were also invited to showcase their wares with the focus on axes, knives, wood and ceramics. i came home with a nice-looking wooden butter knife from renskalla, take a peek at the link, he has beautiful wooden products. and if you ever need a axe, visit kaltfoff axes, made by a young talented woman.
