chicken soup

we had the most delicious chicken soup last night!  i have asked stefan to write and photograph the process of making it:

i love making chicken soup from scratch, it is a very comforting process that i usually do on rainy days when i have some time to pass in the kitchen. today i was home with a bit of a cold so i stopped by granville island after taking kai to school and stocked up on supplies. i have a great recipe for an indonesian chicken soup where this one is based on.

i start with the stock, the chicken is cut up and simmered for a couple of hours with onions, celery, chili flakes, garlic (lots!), ginger, turmeric, bay leaves and star anise. this yields a very hearty, warming stock. i then strain the stock and add a sliced onion, a sliced red pepper, sliced leek, a nice hot chili and some snow peas. pour this over some noodles, top with shredded omelet and you have one comfort food that is absolutely delicious and healthy to boot.
3 bulbs of garlic, ginger and chili flakes give the stock a superbly warming flavor
star anise, one of my favorite spices
the veggies, chicken meat, stock and noodles ready to be combined
the end result, just before being devoured!
if you like indonesian food like i do, check out indochef (also known as henk's hot kitchen), it has all the indonesian classics well covered.
