i love making chicken soup from scratch, it is a very comforting process that i usually do on rainy days when i have some time to pass in the kitchen. today i was home with a bit of a cold so i stopped by granville island after taking kai to school and stocked up on supplies. i have a great recipe for an indonesian chicken soup where this one is based on.
i start with the stock, the chicken is cut up and simmered for a couple of hours with onions, celery, chili flakes, garlic (lots!), ginger, turmeric, bay leaves and star anise. this yields a very hearty, warming stock. i then strain the stock and add a sliced onion, a sliced red pepper, sliced leek, a nice hot chili and some snow peas. pour this over some noodles, top with shredded omelet and you have one comfort food that is absolutely delicious and healthy to boot.
